Part of the knife skills for the ProStart competition is to fabricate a chicken in to the standard 8 pieces.  There is a boneless breast method that is found in the ProStart website, this has been updated to show the exact fabrication Bone-in that they want us to do.   We will practice as a class and you will want to practice on your own as well.  When we choose the team members for each portion of the competition, the ability to properly fabricate will factor in for our choice of teams.
